Chef Lee Chien-Ming—affectionately known in the industry as Chef Ming—brings over four decades of experience in Cantonese cuisine. He has worked at esteemed Michelin-starred restaurants including Zi Yat Heen at the Four Seasons Macao and Duddell’s in Hong Kong, as well as the celebrated Dorsett Kai Tak. Through years of dedication and craftsmanship, he has cultivated a deep mastery of traditional Cantonese technique and flavor.

In 2025, Chef Ming officially joined GOODLINS Hospitality Group to lead the culinary direction of 85TD, guiding the team in shaping a new expression of Contemporary Hong Kong Cuisine. Rooted in tradition yet forward-looking in spirit, his approach draws on Taiwan’s seasonal ingredients and cultural landscape to reimagine the modern Cantonese table. Rather than relying on conventional symbols of luxury, he focuses on ingredient integrity, creative balance, and a refined sense of place—bringing a fresh perspective to Cantonese cuisine through the lens of modern Hong Kong.
