Chef Xie pays homage to the Fook Lam Moon, a world-class Cantonese cuisine house where chicken powder or MSG, and sugar are not used in any dishes. The soup base is simmered down from old hen chicken, Jinhua ham, and deboned pork hind legs. The refreshing broth, bird’s nest, and egg white combine to deliver a nutritious and fulfilling soup.
